Recipe Tuesday: Cinnamon Swirl Oat Bran

Ingredients
  • ⅓ cup gluten-free oat bran
  • ½ cup full-fat coconut milk (Native Forest is my favorite brand)
  • ½ cup filtered water
  • 1 tablespoon grass-fed ghee or coconut oil
  • 1 tablespoon collagen powder (optional but adds more protein)
  • 2 teaspoons ground flaxseed
  • ½ teaspoon cinnamon
  • 1 teaspoon maple syrup
  • pinch of sea salt
Instructions
  1. Heat oat bran, coconut milk and water together in a small pot over medium-low heat for 2-3 minutes. Let stand for 1-2 minutes and then add in ghee or coconut oil, salt, cinnamon, collagen powder if using, ground flax and maple syrup.
  2. Stir to combine and enjoy topped with any or all of the following: shredded coconut, nuts, any assortment of berries (dried cranberries, golden berries, goji berries, blueberries), fresh fruit like chopped apple or pear, etc.
  3. You can make this recipe for two or one large portion by using ⅔ cup of oat bran and 1 cup each of coconut milk and water.
