Snack away on these...
Serves: 12-18 depending on size of balls
  • ½ cup mixed seeds (sunflower, hemp, chia, pepitas, etc)
  • 1 tablespoon barely/wheatgrass powder (Food Matters Superfood Greens, Aloha Daily Greens, etc)
  • ½ cup almonds
  • 1 teaspoon matcha powder
  • ¼ cup shredded coconut
  • ¼ teaspoon vanilla extract
  • ¼ cup nut butter (almond, cashew, peanut)
  • 4 fresh dates, pitted
  • 2-3 tablespoons melted coconut oil (*start with 2 first)
  • 1 teaspoon matcha powder (topping)
  • 2 tablespoon shredded coconut (topping)
  1. Place all ingredients in the food processor except the extra matcha and shredded coconut for the topping and process until well combined.
  2. Roll the mixture into small balls, then roll in shredded coconut and then matcha (NOTE: you may need to refrigerate these BEFORE rolling in the coconut and extra matcha)
  3. Refrigerate for 30 minutes until set
