Baked Apple Fritter
  • 1 Apple, peeled and cut into small cubes
  • 1 egg
  • ¼ cup coconut flour
  • ¼ cup gluten free four
  • ¼ cup maple syrup
  • 2 tablespoon coconut milk
  • 2 tablespoon coconut oil, melted (2 parts)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  1. Preheat oven to 375 degrees. Line a baking sheet pan with parchment paper.
  2. In a bowl combine coconut flour, gluten free flour, baking powder and cinnamon.
  3. In a separate bowl, beat the egg, add maple syrup, vanilla and 1 tablespoon coconut oil, stir to mix well.
  4. Combine the egg mixture with dry ingredients, fold until combined. Use a small ice cream scooper to scoop the batter on the baking pan.
  5. Bake for 10 minutes or when it's firm, brush with the remaining coconut oil, bake for another 15 minutes or until golden brown.
