Baked Apple Fritter

- 1 Apple, peeled and cut into small cubes
- 1 egg
- ¼ cup coconut flour
- ¼ cup gluten free four
- ¼ cup maple syrup
- 2 tablespoon coconut milk
- 2 tablespoon coconut oil, melted (2 parts)
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- Preheat oven to 375 degrees. Line a baking sheet pan with parchment paper.
- In a bowl combine coconut flour, gluten free flour, baking powder and cinnamon.
- In a separate bowl, beat the egg, add maple syrup, vanilla and 1 tablespoon coconut oil, stir to mix well.
- Combine the egg mixture with dry ingredients, fold until combined. Use a small ice cream scooper to scoop the batter on the baking pan.
- Bake for 10 minutes or when it's firm, brush with the remaining coconut oil, bake for another 15 minutes or until golden brown.
